Research and education in Culinary Arts is built on a multidisciplinary approach of the meal and gastronomy context. Two important perspectives are creative cooking and hospitality. Research and doctoral education at Umeå University School of Restaurant and Culinary Arts are under development.
Currently two research projects are in progress. One is about innovation in the hospitality industry and the focus is on eating out experiences. The project is financed by BFUF, the R&D Fund of the Swedish Tourism & Hospitality Industry. Please find more information about the project here (lank till forskningsdatabasen). The other research project is about "The Creation of Culinary Spaces in Sweden and the importance of Fine Dining Restaurants for Regional Development Platforms and the Establishment of Linkages between Rural Food Producers and Consumers".
