Niels Heine Kristensen is studying what factors will be important in order to succeed with the changeover to a more sustainable practice in the food sector. His research revolves around large portions of the chain from farming through product processing to public and private consumption, and gastronomy. This has resulted in the development of new methods for how food producers can establish more robust collaborations with customer groups, for instance in the gastronomic industry.
Niels Heine Kristensen will be installed as a professor in culinary arts at the Annual Celebration Ceremony on 20 October at 17:00 in Aula Nordica.
