Umeå students in cuisine challenge on campus

NEWS On Monday 4 May, a cooking competition will take place at the Umeå University School of Restaurant and Culinary Arts. Nine culinary students will be given 90 minutes each to prepare their main dishes, which will be assessed by a jury including such notables as Björn Norén and Gert Klötzke.

“I thought it was a pity that the School of Restaurant and Culinary Arts did not have a cooking competition, so I arranged one myself”, said Johannes Gebara, the contest originator and a student in the gastronomy programme with a concentration in cuisine.

The students will have 1.5 hours to prepare a main dish, consisting of seasonal influenced ingredients. In addition, the main ingredient in this first year of the challenge is meat.

The jury will be assessing taste, technique, presentation and "mise an place", which is French for the concept of having everything in its place. Members of the jury include Björn Norén, executive chef at Umeå’s top ranked Restaurant Viktor, and Gert Klötzke, professor at Umeå University School of Restaurant and Culinary Arts. Klötzke was named Sweden’s best chef in 1986.

Time and place:
Monday 4 May, 12:45 – 4:45 pm at Restaurangköket (restaurant kitchen) in Teacher Education Building, Umeå University.

Presentation of the winner and distribution of awards will be held at the Ljusgården atrium in the Teacher Education Building at approximately 4:30 pm.
